Apple Muffins

Having kidney disease can be challenging food wise – adding on diabetes, another condition or food intolerance/allergy can make it doubly hard. This recipe focuses on a tea-time treat with less than 1 teaspoon of added sugar in each muffin. It comes from one of my favourite children’s cookbook “River Cottage Baby & Toddler Cookbook” by Nikki Duffy.


  1. Preheat oven to 190 degrees.
  2. Put 12 large muffin cases into a muffin tray
  3. In a large bowl, mix all the dry ingredients together (flour, oats, baking powder, cinnamon, sugar), then mix in the grated apples
  4. In another bowl, mix in the wet ingredients (yoghurt, milk, egg, oil).
  5. Add the wet ingredients into the dry ingredients, add in sultanas and mix everything gently until just combined.
  6. Evenly fill each of the muffin cases and bake for 25-30 minutes until golden brown. Enjoy!


100g plain flour
100g spelt flour (or plain flour)
50g porridge oats
3 level teaspoons baking powder
50g caster sugar
2 medium dessert apples, peeled and grated
125ml plain full fat yoghurt
125ml milk
1 egg
50ml vegetable oil
40g sultanas
